Nachynka (Ukrainian Cornmeal Stuffing) Recipe

INGREDIENTS:
4 tablespoons butter
1 medium onion, chopped
1 cup cornmeal
1 teaspoon sugar
1 teaspoon salt
4 cups milk, warmed
4 eggs, beaten
1 teaspoon baking powder

DIRECTIONS:

Heat oven to 325°F. Lightly spray a 3-quart baking dish with cooking spray.

In medium saucepan over medium heat, melt butter. Add onions. Cook 5 to 7 minutes, or until soft.

Reduce heat to low. Stir in cornmeal, sugar and salt. Add warm milk.
Cook, stirring, until the cornmeal begins to thicken. Remove from heat.
Add eggs and baking powder. Mix well.

Pour into prepared baking dish. Bake 50 to 60 minutes, or until golden brown.
