Chipa (Argentinian Cheese Bread) Recipe

INGREDIENTS:
2 cups tapioca flour
1 teaspoon baking powder
½ teaspoon salt
3 cups shredded Monterey jack cheese,
¼ cup shredded Parmesan cheese
6 tablespoons butter, melted and cooled
2 eggs
2 tablespoons whole milk

DIRECTIONS:
Heat oven to 350°F. Line 2 baking sheets with parchment paper.
In large bowl, combine flour, baking powder and salt. Stir in cheeses.
In another bowl, whisk butter, eggs and milk. Add to flour mixture, stirring to incorporate. Using wet hands, divide dough into 16 balls. Place on prepared baking sheets.
Bake 20 to 25 minutes, or until golden. Serve warm.
